Authentic Korean Japchae Recipe (Glass Noodle Stir-Fry)

Introduction

Japchae is one of the most beloved traditional Korean dishes, frequently served at celebrations, holidays, and special family gatherings. Made with chewy sweet potato starch noodles (dangmyeon), colorful vegetables, and tender beef, all tossed in a savory-sweet soy sesame sauce, it offers a harmonious balance of flavors and textures.

Ingredients

 Main Ingredients:

200g Korean sweet potato starch noodles (dangmyeon)

100g Beef (ribeye or sirloin, cut into thin strips)

1/2 Spinach bundle, washed and blanched

 1/2 Carrot, julienned

 1/2 Onion, sliced

4 Shiitake mushrooms (or wood ear mushrooms), sliced

 1 Egg (optional, for garnish)

 Sauce & Seasoning:

 4 tbsp Soy sauce

 2 tbsp Sugar (or honey)

 2 tbsp Sesame oil

 1 tbsp Minced garlic

 1 tbsp Toasted sesame seeds

 1/4 tsp Black pepper

Step-by-Step Instructions

1. Prepare Noodles:

Boil sweet potato noodles in a large pot for about 6 to 7 minutes until chewy and translucent. Drain, rinse under cold water, and drain completely. Cut noodles with kitchen shears into manageable lengths and toss with 1 tbsp of sesame oil and 1 tbsp of soy sauce to prevent sticking.

2. Season Beef and Mushrooms:

Marinate beef strips and sliced shiitake mushrooms with 1 tbsp soy sauce, 1/2 tbsp sugar, 1 tsp minced garlic, and 1 tsp sesame oil for 10 minutes.

3. Blanch Spinach:

Blanch spinach in boiling water for 30 seconds, rinse in cold water, squeeze out excess water, and season with a pinch of salt and sesame oil.

4. Stir-Fry Vegetables and Beef:

In a skillet over medium-high heat, stir-fry onions and carrots separately with a pinch of salt until soft. Next, cook the marinated beef and mushrooms until fully done.

5. Combine and Toss:

In a large mixing bowl, combine the prepped noodles, cooked vegetables, spinach, and beef. Add remaining soy sauce, sugar, minced garlic, sesame oil, and black pepper. Mix thoroughly using gloved hands until all ingredients are evenly seasoned.

6. Garnish and Serve:

Transfer to a platter and sprinkle generously with toasted sesame seeds. Optional: top with thin egg strips (jidan) for a traditional look.

Chef’s Pro Tips

Chewy Noodle Secret: Toss the boiled and drained noodles with a little soy sauce and sesame oil immediately while warm so they absorb the flavor and don’t clump together.

Sauté Separately: Sautéing each vegetable separately preserves their individual vibrant colors, natural textures, and distinct flavors.

Serve Room Temp or Warm: Japchae tastes fantastic served warm or at room temperature, making it an excellent dish for party meal prep.
