Janchi Guksu is a classic Korean noodle soup featuring soft wheat flour noodles (somyeon) served in a light, fragrant anchovy and kelp broth. Ingredients
- Main Ingredients:
- 200g Korean thin wheat noodles (somyeon)
- 1/2 Zucchini, julienned
- 1/2 Carrot, julienned
- 2 Eggs, separated (yolk and white)
- 1 Green onion, sliced
- 1 Sheet toasted seaweed (gim), shredded for garnish
- Broth Ingredients:
- 8–10 Large dried anchovies for soup (guts removed)
- 1 Piece dried kelp (dashima, about 2×2 inches)
- 1/2 Onion
- 7 cups Water
- 1 tbsp Soy sauce (soup soy sauce guk-ganjang)
- Salt to taste
- Savory Soy Dipping Sauce (Yangnyeomjang):
- 2 tbsp Soy sauce
- 1 tsp Gochugaru (Korean chili flakes)
- 1 tsp Minced garlic
- 1 tsp Sesame oil
- 1 tsp Toasted sesame seeds
- 1 Green onion, finely chopped
Step-by-Step Instructions
- Make the Anchovy Broth:In a large pot, combine water, dried anchovies, kelp, and onion. Bring to a boil over medium-high heat. Once boiling, remove the kelp to avoid bitterness, then lower heat and simmer for another 15 minutes. Strain the broth, discarding solids, and season with soup soy sauce and a pinch of salt.
- Prepare Vegetable & Egg Garnishes:Sauté julienned zucchini and carrots separately in a lightly oiled skillet over medium heat for 1 to 2 minutes with a pinch of salt. Pan-fry egg yolk and white separately into thin sheets (jidan), then slice into thin strips.
- Cook the Noodles:Bring a pot of water to a boil. Add somyeon noodles and cook for about 3 minutes. When the water boils over, pour in 1/2 cup of cold water (repeat twice to achieve a chewy texture). Drain and rinse noodles thoroughly in cold running water to remove excess starch. Drain well.
- Assemble and Serve:Place a portion of cold noodles into a serving bowl. Pour hot broth over the noodles to warm them up. Top neatly with sautéed zucchini, carrots, egg strips, green onions, and shredded seaweed. Serve hot with the savory soy dipping sauce on the side.
